We've got a busy week coming up! Andy are heading out this weekend without the kids (ack!) to a wedding in North Carolina. My mom and dad (aka grandma and pop pop) will be spending some quality time with the kids. As much as I'm going to miss my little people, I'm really looking forward to spending time with Andy- just us as a couple.
But before I get to relax on our road trip, I've got to get our snacks ready (no gas station food for us) and plan our second trip to North Carolina for next week. Yep, we're driving back to Florida Monday only to turn around and head back up on Friday (thanks to Andy's job). We'll be taking the kids up to the Smoky Mountains for a little family getaway and then heading to a wedding the following weekend. Are you keeping up? Me neither.
So this week you are getting an abbreviated meal plan. I won't be cooking on this trip, I'm actually going to attempt to relax. I'm not even going to bring my blender to make smoothies in the morning (although I'm tempted). We will be bringing plenty of snacks for the road though, so I'm including those below.

Dinner: Pizza with steamed broccoli

Dinner: Butternut Squash Curry (from the freezer)

Lunch: Collard Wraps
Dinner: Zucchini Pasta with Raw Alfredo and Marinated Mushrooms
