Raw Breakfast Bowl

I've got a quick, grain free breakfast that will fill you up and keep you going through a busy morning.  If you're in a breakfast rut, try this super yummy bowl of goodness.  It's quick and easy and doesn't require any cooking (yay for raw foods!).

I love this breakfast bowl because it is full of fiber (over 7 grams per bowl), protein and healthy fats.  This combination will keep you full for all of your morning antics and get you off to a good start at meeting your daily fiber intake.  The best part is that it is made from whole foods in their raw state.

If you've got the time and plan ahead, it is also best to soak the pumpkin seeds and almonds to make their nutrients more available.  If you do this, skip the food processor and just chop them so you don't end up with mush.

Raw Breakfast Bowl

Makes 2 bowls

1 apple
1 large banana
2 tsp coconut oil, melted
2 tsp hemp
2 tsp chia seed (or meal)
2 tbsp unsweetened shredded coconut
2 tbsp sliced almonds
2 tbsp pumpkin seeds

Add chia seed to food processor (I use a magic bullet for this) and grind until it forms a meal.
Combine hemp, chia seed meal, shredded coconut, almonds and pumpkin seeds in a food processor and process for a few seconds.  You want to leave a few chunks.
Dice apple and add half to each bowl.

Dice banana and add half to each bowl.

Add half of seed & nut mixture on each bowl.

Drizzle each bowl with half of coconut oil.  Note: if you have solid coconut oil you can melt it by placing the coconut oil in a small bowl and set it in a larger bowl of warm water.  Please don't microwave it!

Sprinkle a dash of cardamom and a generous shake of cinnamon on each bowl and enjoy.
