I love to grill. If I could use our grill every night I would (except for the raw days of course). Grilled food always tastes so fresh to me. Plus I get to be outside while cooking instead of making my kitchen hot with the stove or oven! If you think the grill is only for meat you are missing out. Some of my favorite grilled foods are veggies- including stuffed tomatoes!
My mom used to make stuffed tomatoes on the grill when we were kids. She served them with shish kabobs and it was one of my favorite meals. Hers were made with Parmesan cheese and bread crumbs though and I wanted to try for a healthier version. These came out great- they were full of flavor and light and refreshing. I served them with some marinated chicken skewers and grilled asparagus.
If you've got a grill basket or tray you can put the tomatoes on it to keep them from falling apart on the grill. I've made these many times without one, including today, but it's a convent way to take them on and off the grill.
Stuffed Grilled Tomatoes
1/2 cup parsley, finely chopped
2 cloves garlic, minced
1/2 cup onion, chopped
1 cup mushrooms, chopped
1 green onion, minced
1 tbsp olive oil
1 tsp lemon juice
1/2 tsp herbamare
Slice tomatoes in half horizontally.
Using a knife or spoon scoop out a shallow bowl in the tomato.
Dice the scooped out tomato.
In a medium bowl combine chopped tomatoes and remaining ingredients.
Mix well and allow to marinate at least 30 minutes.
Scoop mixture into tomato halves and press down.
Grill on medium high for 10 minutes.
Watch carefully to make sure the tomatoes don't over cook.
Allow to cool slightly and serve. Nobody likes a mouthful of molten tomato!
