Watermelon Salsa

I know it's not summer.  But mother nature doesn't- it was 85 last week when I made this.  When I saw the first round of watermelon in the store I couldn't resist.  It wasn't organic, and it definitely wasn't local but I miss watermelon.  I look forward to it every year.  It's one of those foods that is perfect to eat even in the sweltering Florida summer heat.  And since watermelon is listed on the low end of the EWG's pesticide list I don't mind the kids eating it too much.
Watermelon is actually on the EWG's "clean 15."  If your not familiar with the EWG (Environmental Working Group), they rack and stack common produce based on studies conducted by the FDA and USDA.  A fruit or veggie is ranked based on a number of factors including the number of samples containing pesticides, the number of chemicals per sample, and the amount of pesticides contained on the sample.
As an example apples rank as the number one worst offender.  92% of apples tested contained pesticides- and up to 56 different chemicals.  These studies are done on fruit and veggies that have been washed and peeled (if eaten that way).  It's kind of scary to think about all of those chemicals being left on your produce!
At the very least it's best to avoid the Dirty Dozen or to buy organic when eating these items.   I've chosen to buy organic for the majority of our produce since my kids are rebuilding their immune systems after so many sicknesses and drugs.  Their little bodies don't need the added stress of trying to get rid of all of those chemicals.  I've noticed huge improvement in their health since I've changed our eating habits and I believe that this is partially due to the absence of all of those pesticides.

So on to the salsa.  This is a light refreshing salsa that is highly addictive.  It is perfect served over fish.   I served it over grilled cod and some spinach (of course).  You could also use this to top a salad or just eat it from the bowl with a large spoon (when no one is looking).  Our watermelon wasn't organic but everything else was.

Watermelon Salsa

2 cups watermelon, cut into 1/4 inch cubes
1/3 cup red onion, diced
2 tbsp mint, chopped
1 tbsp cilantro, chopped
1 tbsp jalapeño, diced (or to taste)
Juice from one small lime

Combine all ingredients and let marinate for 30 minutes.

*If you are making ahead of time, leave out the lime until 30 minutes prior so your watermelon doesn't get soggy.  I kept the leftovers in the fridge overnight and it was ok but it tastes best fresh!

If you want to serve this with cod just season the fish with a little lemon juice, salt and pepper and grill on high heat for about 3 minutes per side.

Sprinkle a little more lemon juice, S&P over some spinach and you've got a simple meal.

I also made some veggie quinoa bites since the kids need some carbs to stay full though the night.  I've got that recipe coming soon.

Oh and I almost forgot about the peas.

There were fresh organic english peas at the vegetable stand this week so I shelled those too.  I boiled them for a few minutes and the kids gobbled them down.

I would have liked to have some too but there were no leftovers.  Poor me.
